Recipe: Seeded nut & fruit bliss bars with Vutter Avo, by Jesse Ormsby

Delicious healthy energy filled snack for any time of the day. A great lunchbox addition for kids and grown ups!

Vegan Gluten free Seeded nut & fruit bliss bars

Ingredients:


1/2 tbs Brown sugar or golden syrup

1/2 cup of toasted walnuts

1/2 cup fo roasted natural almonds

1/2 cup of pumpkin

1/2 cup of sunflower seeds

1/3 cup of torn dates

1/2 cup of Raisins

1 tbs of toasted sesame seeds

1/2 tsp of cinnamon

1 chai tea bag

Sea salt


Soak the raisins in boiling water with a chai tea bag for a few hours until they are plump and juicy then mix them with dates, nuts, seeds, a dash of cinnamon and quite a few twists of sea salt.


Melt Vutter and sugar (or golden syrup). Blitz the nuts, seeds and fruit in a food processor and pour the Vutter-sugar liquid mix in while blending. Blend until it reaches a pesto like consistency.


Pack the mixture firmly into a loaf pan using a hot wet spoon, then lay a piece of baking paper on top and squash it down really hard for exceptional results to the texture.


I successfully experimented with rolling them into bliss balls, squashing them flat into mini patty cases AND tipping it all into a loaf tin and spreading it out with the back of a spoon (running the spoon under hot water when the mixture began to stick to it).
