RECIPE: Ginger crunch, by @VeganElla

Ginger lovers, this one is for you! Vegan buttery gingery heaven..... Recipe created by the legend @Veganella



Ingredients:


Base

100g Vutter Original

½ cup sugar

¼ cup golden syrup

1 ½ cup rolled oats

¾ cup flour

1 tsp baking powder

2 tbsp ground ginger


Icing Top

110g Vutter

3 tbsp golden syrup

2 cups icing sugar

4 tsp ground ginger


Crystalised ginger to sprinkle on top


Method:


Preheat the oven to 170 degrees celsius. 


In a small saucepan, melt Vutter then add in sugar, golden syrup and mix through until sugar is dissolved. Remove from heat then stir through rolled oats, flour, baking powder and ginger. 


Transfer mixture to a 20cm x 20cm baking dish lined with baking paper and spread evenly. Bake in the oven for 20-25 minutes until golden. 


Once baked, remove from the oven and leave to cool. 


Meanwhile make the icing top by melting Vutter in a small saucepan then adding golden syrup and stirring to combine. Add icing sugar and ginger and mix until combined. Spread evenly over the cooled base then sprinkle with crystallized ginger. Leave to set overnight in the fridge.


*Can be made it gluten-free by using GF oats
